Make it with Mushrooms Student Chef Challenge 2009 College/Faculaty School: Humber College, Canadian Centre of Culinary Arts and Science Course Director: Chef Anne-Marie Ellis CCC Chef Team Members: Rick MacCormack, Arun Antony Gnanasambanthanar, Xiahong Lin Video Team Members: Trevor Fulton Chinadia is named after the cultural influences of the three students in the development of this recipe. After telling the students about the competition there were several good entries to choose from. Rick, Arun, and Xiahong all entered great recipes with a different cultural angle: Canadian, Chinese and Indian. After careful review of the submitted recipes with some of my colleagues Chefs and I sat down with the students and let them know each of the recipes had some great ideas and how about we combine them? This is how we came up with this recipe with some spices from India, some techniques from China and some products and of course students from Canada. We hope you enjoy!
